If you, like me, love Lemon curd, then you should try this too. The sour/sweetness of lemon curd is less here. But definitely worth it as a variation.
Ingredients:
2 to 3 oranges
175 gr. sugar
125 gr. unsalted butter
2 eggs (size M)
Preparation:
Grate 2 oranges into a heavy-bottomed pan. Add the sugar and butter.
Squeeze the oranges until you have 100 ml of juice. Add this to the pan.
Place the 2 eggs in a bowl and beat briefly.
Place the pan with contents on the stove and heat until the butter has melted and the sugar has been absorbed.
Now pour the orange juice very slowly into the eggs, while continuing to stir well. This way the eggs cook without frying.
Now pour everything back into the pan and place it over low heat. Keep stirring! While everything is now slowly thickening. This really takes a while.
If you set the heat too high, the curd will become grainy, so be careful.
Now you can, if necessary, strain the grater from the curd. I personally find those little dots in the curd funny, so I don’t do this.
You can use this orange curd with the yoghurt pudding.
