A simple and vegetarian recipe that is ready quickly. Especially if you use pre-cut pumpkin cubes.
Dish for 4 people.
Ingredients:
800 gr. Pumpkin cubes
2 onions
2 cloves of garlic
250 gr. Halloumi
10 gr. Vandouvan herbs
Orange juice (about 1/4 cup)
fresh or dried mint
(salted) cashew nuts
Greek yoghurt
rice
Preparation:
Cook the rice according to instructions.
Heat a pan with oil over high heat. Quickly fry the pumpkin cubes and then reduce the heat. Let this fry for about 10 minutes while stirring occasionally.
In the meantime, cut 2 onions into half rings and chop the garlic finely.
Add the garlic, onion and Vandouvan herbs after about 10 minutes. Fry this well.
Now add the orange juice and stir well.
Turn off the heat and sprinkle the mint over it.
Quickly fry the Halloumi in a grill pan until brown. This takes about 2 minutes.
Drain the rice and transfer to a plate. Top with pumpkin and then the Halloumi, cashew nuts and Greek yoghurt.
