Pork Bahn Mi

A really quick dish to put on the table. Okay, the vegetables take a little longer, but they can be made in advance. The vegetable will keep well for a few days after preparation. Cooking the rice is what takes the longest with this dish.

Dish for 2 people.

Ingredients:

1/3 cucumber

1/2 winter carrot (or ready-cut Julienne carrots)

60 ml. rice vinegar

3 tbsp sugar.

pinch of salt

350 gr. minced pork (if you can’t find this, you can also use mixed minced meat)

1 tsp sesame oil (for frying)

1/4 tsp ginger powder

1/4 tsp garlic powder

1 tbsp sriracha sauce

60 ml. Teriyaki Sauce

Jasmine rice for 2 people

coriander fresh

Preparation:

Cut the cucumber in half and use a spoon to remove the soft part of the inside. Cut the halves in half again and cut into slices.

Cut the winter carrot julienne. Combine the vegetables in a shallow bowl. Add the rice vinegar, sugar and pinch of salt. Stir well and let it sit for a while. This will keep well for a few days.

Now cook the rice according to the instructions.

Now heat a wok with the sesame oil and brown the minced meat with the ginger and garlic for a few minutes.

Add the sriracha sauce and the teriyaki sauce and fry for a few minutes until the meat is caramelized.

Place the rice in a bowl or deep plate. Add the vegetables on top and finally the meat on top. Garnish with the fresh coriander.
