It’s warm again and so, as far as I’m concerned, it’s salad time. With this warm weather I really don’t feel like cooking for a long time and for this salad you only have to cook the pasta. Even better, while the pasta is cooking, just chop the rest of the ingredients. So nice and quick and easy.
Dish for 3 people as a main course.
Ingredients:
300 gr. Penne pasta
3/4 Cucumber
5 to 6 rings of pineapple (in juice)
200 gr. Feta cheese
Parcel of gammon
4 tbsp mayonnaise
3 tbsp crème fraîche
1 tbsp Sweet paprika powder
pepper and salt
Preparation:
Cook the pasta as per the instructions. I use gluten-free pasta and cook it a little longer so that it is a bit softer.
Now cut the cucumber into half moons (remove the seeds). The feta cheese in cubes, the ham in pieces and the pineapple also in pieces.
Make the dressing by mixing the mayonnaise, crème fraiche and paprika powder well. Add salt and pepper to taste.
In the meantime, the pasta is also ready. Remove from the heat, drain and rinse under cold tap to stop the cooking process.
First mix the dressing into the pasta so that it is well covered and then add all the other ingredients. Stir well and you’re done.
Serve as a main course or as a side dish.
