I have previously posted a Mexican bean dish with chorizo on the site, but this is a vegetarian variant that is also very tasty.
Ingredients:
Red onion
Cheddar cheese
Red pepper
Enchilada sauce
3 cloves of garlic
1 red pepper
1 can of diced tomatoes
Small can of corn kernels
Lime
300 gr. White rice
Medium can of black beans
1 tsp chili powder
1 tsp cumin
1/2 tsp cayenne pepper
creme fraiche
Salt and pepper
Nacho cheese
Optionally sour cream and quacamole
Preparation:
Make sure you have cooked the rice in advance and that it has cooled. It should be nice and airy. So no mushy rice.
Cut the pepper into pieces, the red onion into halves, the pepper finely and press the garlic.
Place a pan on the stove and let it get hot. Put a little oil in the pan (turn the heat down slightly) and first fry the onions, garlic and red pepper.
When the onions start to look translucent, add the pepper. Let this also fry well. Keep stirring occasionally until the pepper has softened slightly.
Add the corn and tomatoes and let it simmer for a few minutes.
Now add the rice. the black beans, a few spoons of enchillada and 2 tablespoons of crème fraîche. Stir well. Now add the herbs, stir again and let them heat thoroughly. Now taste and see how much lime juice you want to add. You can also add the cheese now and let it melt into the dish, but you can also grate it over it. Or both, that is of course also possible.
Serve with the nacho cheese and, if you like, sour cream and quacamole
