A real student meal. Quickly prepared, healthy and easy.
Dish for 3 people.
Ingredients:
3 large sweet potatoes
500 g green beans
1 large onion
200 gr. smoked bacon cubes
1 red pepper
2 cloves of garlic
1 tsp thyme
1 tsp (smoked) paprika powder
Preparation:
Peel the sweet potato and cut it into “bite-sized” chunks. Place this in a microwave dish.
Shell the beans and break them into pieces. Add this to the sweet potato.
Rinse the potato and green beans under the tap. Cover the microwave dish. Place it in the microwave on full power for 8 minutes.
In the meantime, preheat the oven to 180°C (convection).
Chop the onion, finely chop the garlic and pepper. Heat a pan on the stove and first fry the onions with a dash of oil. Not too hard, they should become glassy. Add the pepper and garlic and fry for a while.
Take an oven dish and put the onion/pepper/garlic in it.
Fry the bacon cubes in the same pan you used to fry the onions. After baking, add to the onion mixture in the baking dish.
When the green beans and sweet potato are ready, add them to the rest in the baking dish. Add the thyme and paprika powder. Mix well.
Now place the entire dish in the oven and let it become slightly crispy for 15 minutes. And then you’re done!
