A very quick dish for 4 people.
I use gluten-free ready-made gnocchi, but you can of course also make your own gnocchi.
Ingredients:
500 grams (uncooked) gnocchi
1 double pack of bacon cubes
2 chicken thigh fillets
2 garlic cloves
500 g mushrooms
250 ml cooking cream or whipped cream
125 ml (chicken) stock
Parmesan cheese
Italian spices
Pepper
Preparation:
Cut the chicken thighs into small cubes, cut the mushrooms small, not too small, coarse. Chop the garlic and grate the cheese in advance.
Heat a pan on the stove and fry the bacon cubes in it. Make sure some fat is released as well. Remove the bacon cubes from the pan, but make sure some fat remains in the pan.
Fry the chicken thighs. They don’t have to be done yet. Add the garlic and Italian herbs and fry briefly. Now add the mushrooms and fry them briefly.
Now add the gnocchi, bacon cubes, stock, cream and Parmesan cheese and bring to the boil. When it boils, reduce the heat and let it simmer for about 5 minutes. The sauce should now have reduced a bit and thickened.
