Another delicious Vietnamese dish, with everything Vietnamese food stands for. Fresh, healthy and tasty.
This dish is for 4 people.
Ingredients:
Meatballs:
500 gr. mixed chopped
2 tbs fish sauce
4 tsp granulated sugar
3 to 4 stems of spring onion
2 cloves of garlic
Pinch of white pepper
4 tsp lemongrass paste
3 tbs oil for frying
Noc cham (Vietnamese dressing):
6 tbs granulated sugar
6 tbs fish sauce
4 tbs rice vinegar
Juice of 2 limes
170 ml of water
2 red peppers
6 cloves of garlic
Also needed:
200 g rice noodles (can also be other noodles)
Handful of bean sprouts
Small bag of lettuce (e.g. 75 g iceberg lettuce)
1 large, or 2 smaller winter carrots
Coriander
Mint
possibly extra red pepper
Preparation:
Start with the dressing. Cut the garlic and pepper (with or without seeds) into small pieces. Juice the limes.
Mix all ingredients together in a bowl and set aside.
Prepare the noodles as stated on the package. Rinse it well after cooking so that the cooking stops.
In the meantime, cut the carrots into strips (julienne). Chop the coriander and cut the mint into strips.
Chop the spring onion into fine strips. Put this together with the minced meat and the rest of the meatball ingredients in a bowl and mix well. Roll this into balls and flatten them. I get 12 balls out of this. Make sure that the number is divisible by the number of people eating with you.
In the meantime, stir the dressing again. The sugar must be completely absorbed. Taste to see if it tastes good and if not you can adjust it.
Now fry the flat meatballs in a hot pan with the oil until done.
Divide the noodles among the bowls.
Divide the carrot, bean sprouts, lettuce, coriander (keep some aside for garnish if you wish) and mint.
When the meatballs are ready, divide them among the bowls and then spoon the dressing over them. The noodles may swim in the dressing, but you should think of it as a kind of broth.
Garnish if necessary. with coriander and some extra chopped red pepper.

P.s. Instead of dividing everything into the bowls, you can also put everything in bowls on the table so that people can grab it themselves and fill the bowls with what they want, as it is done in Vietnam.
