Tarte tatin ice cream

Ice cream for 8 people, but here it was completely consumed by 6 people.

This is really a super easy ice cream recipe that is just as good as ice cream bought in a supermarket. Softly creamy and without ice crystals, even though you don’t need an ice cream machine for it. Well, the taste of tarte tatin is also great.

I made this ice cream with gluten-free gingerbread cookies, just so I can enjoy this dessert. Other cookies and non-gluten-free cookies are of course also possible.

Ingredients:

For the apples:

2 Granny Smith (another sour apple can also be used)

4 tbs dark brown caster sugar

1 tsp cinnamon

50 gr. butter

For the ice cream:

1/2 liter whipped cream

1 tsp vanilla extract (or fresh vanilla, also tasty)

300 ml condensed milk

100 g gingerbread cookies

Optional some extra cinnamon

Preparation:

Peel the apples and cut them into small pieces (it will eventually go through the ice and you don’t want large chunks of apple).

Place the apple, cinnamon, brown caster sugar and butter in a pan. Fry this over high heat until the butter and sugar have melted. Then reduce the heat and let the apples soften for a while. This took me about 5 minutes.

Place the apples on a baking sheet and let it cool completely.

When the apples are cold, prepare the rest of the ingredients. Coarsely crumble the cookies.

Beat the whipped cream with the vanilla, slightly thicker than lumpy, but not into super stiff peaks.

Keep a little bit of the apples and the cookies aside and add the rest with the condensed milk and possibly. the extra cinnamon with the whipped cream. Gently fold this together.

Pour this into a container that can be placed in the freezer. Divide the reserved cookies over the top, just like the reserved apples.

Put the container immediately in the freezer and let it sit for a considerable number of hours (count on at least 5 hours). This of course depends on how cold your freezer is.

Before serving, remove the container from the freezer and let it rest for a while. You will soon see that it will thaw slightly (about 8 minutes for me).
