Wonderfully fresh and fresh dessert.
Ingredients:
Bavarois:
2.5 leaves of gelatin
35 g Greek yogurt
35 g granulated sugar
125 grams of strawberries
10 ml lemon (this can also be taken from a pack)
250 ml whipped cream
Coulis:
125 grams of strawberries
1 tbs icing sugar
1/4 tsp lemon juice (this can also be from a carton)
Preparation:
Bavarois:
Soak the gelatin in cold water and let it stand for at least 5 minutes.
Stir the sugar and Greek yogurt together in a mixing bowl and set aside.
Add the strawberries and lemon juice to a blender and puree well. There should be no more pieces left in it. Add this to the yogurt and mix well.
Squeeze the gelatin into a small pan and let it melt over half heat. Once it has melted, stir it into the strawberry/yogurt mixture. Let this set in the refrigerator for 10 minutes until it becomes a bit lumpy. Then stir it well again.
In a separate bowl, beat the whipped cream until stiff. You do this without sugar.
Add a third of the whipped cream to the strawberry/yogurt mixture and make family. Try to leave as much air in everything as possible. Carefully fold in the rest of the whipped cream twice.
Place the bavarois in a piping bag and pipe/divide the bavarois over 8 glasses/containers.
Place in the refrigerator and let it set for at least an hour.
Coulis:
Place the strawberries, lemon juice and icing sugar in a blender and puree well together.
You can now sieve it and remove all the seeds if necessary, but I personally think those few seeds belong to the strawberry flavor so I don’t do it.
Pour the coulis over the bavarois and it is ready to serve.
You can of course add an extra strawberry or a sprig of mint to garnish.
