A soft and airy mousse with a subtle lime flavour.
Dish for 6 people.
Ingredients:
3 Limes
75 gr. sugar
4 eggs
2 sheets of gelatin
250 ml. cream
Preparation:
Soak the gelatin leaves in plenty of cold water for at least 10 minutes.
Scrub the limes clean (the 3rd lime is for decoration) and zest 2. Set the zest aside. Squeeze the 2 grated limes and place in a heatproof bowl.
Split 3 eggs. Make sure you keep the proteins fat-free. You only need 1 egg yolk further.
Add the sugar to the lime juice in the bowl, together with 1 whole egg and 1 egg yolk. We are now going to heat this in a bain marie, whisking with a whisk, until it becomes a cream. Please note: this will take about 5 to 6 minutes.
Remove from the heat and add the squeezed gelatine while whisking.
Now beat the whipped cream until stiff and fold in the (cooled) cream together with the lime zest.
Now beat the 3 egg whites to firm peaks and fold them in parts into the lime whipped cream. Keep everything as airy as possible.
Spoon, or pipe, into beautiful glasses and let it set in the refrigerator for a few hours. You can use the zest of the 3rd lime to decorate.
