Spicy Thai noodles salad

Now that the weather is finally nice again, I quickly share a deliciously fresh and yet spicy salad. And also ready quickly.

Dish for 4 people.

Ingredients:

1 pack of Pad Thai rice noodles

2 pieces of steak

1 cucumber

1 cup of cherry (bunch) tomatoes

1 (or 2 small) red onions

handful of cashew nuts

Dressing:

2 tbsp sugar

3 tbsp soy sauce

3 tbsp fish sauce

2 tbsp peanut oil

2 red peppers

1 tbsp fresh coriander

juice of 1 lime

Preparation:

Finely chop the red pepper and coriander. Mix that together with all the ingredients for the dressing. Stir well and let it stand for a while so that the flavors mix well and the sugar dissolves.

Now cook the Pad Thai noodles according to the packaging and rinse them cold.

Remove the seeds from the cucumber and cut them into quarter slices or half moons.

Cut the onion into half rings and cut the cherry tomatoes in half.

Mix the vegetables together well with the noodles.

Now quickly fry the steak. It doesn’t matter if they are rare or medium rare. Just what you like.

Let the meat rest for a while, covered with foil, and then cut it into thin strips.

While the meat is resting, mix the dressing thoroughly with the noodles. Place the meat on the salad.

Garnish if necessary. with some extra fresh coriander.

Enjoy your meal.
