Now that the weather is warm again, I don’t feel like standing in the hot kitchen and a pasta salad is always a good alternative. We have actually been making this pasta salad on the go for years. It can be prepared well in advance.
By the way, this pasta salad is very easy to make vegetarian by replacing the smoked chicken with feta cheese.
Dish for 4 people.
Ingredients:
300 gr. Penne pasta
1 smoked chicken fillet
1 small can of corn
half a cup of snack tomatoes
2 handfuls of arugula lettuce
2 tbsp pesto
lemon juice
Preparation:
Cook the pasta according to the instructions and rinse it after draining.
Mix the pesto with a little lemon juice and stir into the pasta.
In the meantime, cut the tomatoes into quarters and the chicken fillet into cubes. Drain the corn and put everything in a bowl together with the pasta and lettuce. Mix well and you’re done. Possibly add some more salt and pepper.
Serve with baguette.
