A Mexican one-pan dish. But this time not with rice, but with potatoes.
Dish for 4 people.
Ingredients:
500 gr. Potato wedges
1 large white onion
1 pepper
2 cloves of garlic
1 can of corn
1 can of kidney beans
200 gr. Chorizo sausage
1 bag of taco seasoning
1 can of diced tomatoes
grated TexMex cheese
sour cream
Guacamole (optional)
Coriander for garnish
Preparation:
Preheat the oven to 160°C.
Cut the onions toddy and chop the garlic finely. Cut the pepper into cubes and the chorizo into half slices.
Heat an oven-proof pan (if you don’t have one, you can transfer everything to an oven dish later). Melt butter and fry the potato wedges until brown. Then remove them from the pan and set them aside.
If necessary, add now add a little butter or oil. Quickly fry the onions and garlic here. Then quickly fry the pepper and chorizo.
Now add the corn, beans, diced tomatoes, and the taco seasoning. Let this simmer for about 5 minutes.
Now put the potatoes back in the pan and stir everything well. Sprinkle the cheese over it and put everything in the oven (if you don’t have an oven-proof pan, transfer it to an oven dish before you sprinkle the cheese over it).
Leave this in the oven for 10 minutes. Sprinkle and possibly some fresh coriander left.
Serve with sour cream.
