A quick and healthy vegetarian meal. And after the carving, the oven does the work. So nice and easy.
Dish for 4 people.
Ingredients:
1 kilo of fresh pre-fried fries with skin
2 to 3 onions
1 zucchini
3 peppers
3 cloves of garlic
1/2 tsp chili flakes
coarse sea salt
75 gr. feta
Arugula lettuce
6 tbsp oil
1 tsp paprika powder
1 tsp rosemary
1 tsp curry powder
1/2 tsp cinnamon
Sauce:
6 tbsp mayonnaise
1 tbsp parsley
1 tbsp fresh lemon juice
pinch of salt and pepper
Preparation:
Preheat the oven to 180°C.
Place the fries on a baking tray lined with baking paper.
Cut the peppers into thin strips, the zucchini into half moons and the onions into half rings. Chop the garlic. Divide this also over the baking tray.
Mix the oil with the paprika powder, rosemary, curry powder and cinnamon.
Stir well and pour over the potatoes and vegetables on the baking tray. Toss everything together well. Make sure the oil covers everything well.
Now sprinkle the chili flakes and sea salt over the plate and place it in the oven.
Bake for 25 minutes.
Mix the mayonnaise with the parsley, pinch of salt and pepper and the lemon juice.
When the plate can be removed from the oven, crumble the feta over it. Finally, spread a little arugula over it and then you’re done.
Serve with the mayonnaise.
