A delicious spicy soup. Chicken soup and tomato soup in one.
Dish for 5 people.
Ingredients:
3 red peppers
8 cloves of garlic
3 bay leaves
2 tsp coarse sea salt
1 tsp smoked paprika powder
1 tsp oregano
1 tbsp red wine vinegar
olive oil
2 chicken legs
6 pomodori tomatoes
1 winter carrot
2 onions
500 g firm boiling potatoes
Preparation:
Place the red peppers, garlic, bay leaves (remove the veins), sea salt, paprika powder, oregano and wine vinegar in a blender and grind finely. Add oil until it becomes a smooth paste/marinade.
Place the 2 chicken legs in a bowl. Add 2/3 of the paste and massage the paste into the chicken legs. Cover and let it marinate for an hour. Set the remaining marinade aside.
Cut the winter carrot into slices and the tomatoes into pieces.
Now preheat a pan. Put a little oil in the pan and fry the remaining marinade in it.
Add the chicken legs, including the marinade, and fry them briefly. Remove the bolts from the pan and set aside.
Place the tomatoes and carrot in the pan and fry until the tomatoes release good juice and break apart.
Return the bolts to the pan and add 1 liter of water, or as much as necessary, until the bolts are well submerged.
I only add about half a liter of water to the eco stove.
Bring everything to the boil and let it simmer over low heat for an hour.
Then remove the legs from the soup. Place them in a bowl and set them aside to cool slightly.
Put the hand blender through the soup and blend everything well. Strain the soup and press all the liquid thoroughly through the sieve, this contains the tastiest flavors. Let the soup stand in this pan/bowl for a while.
Now cut the onions into half rings and peel the potatoes. Cut these into small cubes.
Sauté the onions in the stockpot. Now add the soup again. Also add the potato cubes and bring it to the boil again.
Let this simmer for fifteen minutes until the potatoes are done.
In the meantime, pick the chicken from the legs and separate it into small pieces. Add to the soup and let it warm up briefly.
Serve with bread.
