There was still a lentil dish missing from this site. But luckily he finally gets around to it.
Dish for 3 people
Ingredients:
1 1/2 cups red lentils
1 can of coconut milk (take the fatty one)
1 can of diced tomatoes
1 onion
3 cloves of garlic
piece of fresh ginger
1/2 tsp cumin powder
1/2 tsp coriander powder
1/2 tsp turmeric powder
1 tsp garam masala spices
1 tsp curry powder
salty
1/2 liter vegetable stock
200 g fresh spinach
Preparation:
Chop the onion, finely chop the garlic and grate the ginger.
Heat a frying pan/soup pan and add oil.
Place the onion, garlic and ginger in the pan and fry over a low heat until the onions are translucent.
Add all the herbs and fry them quickly.
Now add the tomatoes, 3/4 of the coconut milk, the stock and the rinsed red lentils and bring to the boil.
As soon as it boils well, reduce the heat and let it simmer gently for about 15 minutes. Stir occasionally and check when your lentils are done. Add extra stock or extra coconut milk if necessary.
When the lentils are done, add the spinach and let it cook/shrink for a while.
Serve with naan bread or rice. Or with both.
