Delicious fresh/sour old-fashioned pudding.
Ingredients:
2 limes (cleaned)
300 ml whipped cream
4 tsp sugar
1 packet of vanilla-flavored sugar
3 gelatin leaves
Preparation:
Soak the gelatin in plenty of cold water.
Place 100 ml whipped cream with 3 tbs sugar and the bag of vanilla sugar in a pan. Place this on the stove and heat it until the sugar melts, until it reaches boiling point. Stir well if necessary.
Remove the pan from the heat and dissolve the gelatin in it.
Grate 1 lime and squeeze 2 out. Stir this zest and juice well into the whipped cream mixture. Let this cool. It should thicken a bit. To speed up this, you can pour it into a bowl and place it in cold water. Make sure to stir regularly otherwise the bottom will solidify.
Do not continue with the recipe until it has cooled thoroughly.
Beat the remaining 200 ml whipped cream with 1 tbsp sugar until stiff.
Fold the whipped cream into the lime mixture 3 times. Make sure you create family first and don’t lose too much air.
Rinse your pudding mold with cold water and do not dry it. The pudding mold can be anything, a bowl, a turban shape, a plastic container.
Pour your lime mixture into the pudding mold and cover it with foil. Place it in the refrigerator for at least 3 hours to firm up properly.
Transfer the pudding to a plate. You can do this by keeping the mold in warm water for a while. Place the plate on the mould, turn it over and if all goes well it will come out of the mould smoothly.
To serve it beautifully, grate some extra lime zest and some white chocolate curls over it.
