This sandwich can be put on the table very quickly. It is spicy, but the lime mayonnaise makes it tasty and fresh.
Recipe for 4 people.
Ingredients:
6 chicken thigh fillets
2 Red onions
3 cloves of garlic
1 Red pepper
400 gr Thai wo vegetables
3 tbs of ketjap man
2 tbs ketchup
2 tbs SWEET chili sauce
1 tbs sambal swimsuit (Another one is also possible)
1 TB Mirin
1 tbs brown sugar
2 tsp curry powder
3 tsp paprika powder
Pepper and salt
Juice of half a lime
oil for frying
2 baking ciabatta
Salad
For lime mayonnaise:
mayonnaise
1 lime
Pinch of salt
Preparation:
First make the lime mayonnaise.
Place the mayonnaise in a bowl. Grate the zest of the lime above. Squeeze the juice over it. Add a pinch of salt and stir well.
Set aside for a moment.
Chop the onion, finely chop the pepper and squeeze the garlic.
Cut the chicken thighs into small pieces and sprinkle with salt and pepper.
Bake the ciabatta according to instructions.
Heat the pan with the oil and fry the chicken until golden brown on all sides.
Add the onions, pepper, garlic, sambal, curry powder and paprika powder and fry briefly. A minute or 2.
Then add the soy sauce, ketchup, SWEET chili, mirin and brown sugar. Squeeze half the lime over the pan. Stir well and bring to the boil. Reduce the heat and put a lid on the pan.
Let this simmer for 10 minutes. Remove the lid from the pan, increase the heat and let the sauce reduce for about 10 minutes.
Add the wok vegetables, stir and let them heat through for another 5 minutes on low heat.
Cut the ciabatta into pieces. Spoon a generous amount of lime mayonnaise on top. Top with lettuce and chicken. You can now put the top of the ciabatta on it. Not necessary, but it certainly makes eating easier.
