This dish is a meal salad for 3 people.
Ingredients:
200 gr. Pandan rice
100 g frozen peas
4 spring onions
1 yellow pepper
1 winter carrot
13 cucumber
2 small red onions
3 cloves of garlic
12 tbs ketjap manis
1 tbs honey
1 tbsp sweet chili sauce
2tbs sushi rice vinegar
1 tbsp mirin
1 tsp sesame oil
1 tsp sambal oelek (if you don’t like spicy, take a milder sambal)
Pepper and salt
Preparation:
Boil the rice until done and let it cool completely
Stir together the ketjap, honey, sweet chili, rice vinegar, mirin, sesame oil and the sambal and set aside.
Cut the pepper, cucumber, spring onion and grate the carrot. Chop the onion and finely chop the garlic.
Put a dash of oil in the pan and immediately heat the red onion and garlic. Let it heat for a few minutes, keep stirring so that the garlic does not burn. Add the peas and the sauce. Heat this up for a few minutes as well.
Add the peas/onion mixture to the rice. Also add the other vegetables and mix everything well.
Taste and add salt and pepper if necessary.
