This salad is delicious and also easy to change with other ingredients. For example, I have regularly replaced the apricots with peaches because there were no apricots in the store. Sometimes I roast the fruit, sometimes I don’t.
The smoked chicken can be replaced with home-baked chicken, but it is also delicious with fried bacon. And you can easily leave out ingredients because you don’t feel like it or simply because you don’t have them at home.
Dish for 6 people.
Ingredients:
1 pack of Moroccan couscous (regular couscous is also possible, but the Moroccan has more flavor)
Water (see couscous packaging)
Salty
1 lemon
Parsley
Salt and pepper to taste
Dash of oil
6 apricots
100g feta cheese
1/2 cucumber
1 smoked chicken fillet (or other meat, see above)
Handful of peeled and roasted pistachios
Arugula lettuce
Preparation:
Prepare the couscous according to the package in salt water.
Squeeze the lemon. As soon as the couscous is ready, mix the lemon juice, parsley, a dash of oil, salt and pepper into the couscous and let it stand for a while.
Cut the feta, cucumber and smoked chicken into cubes and place in a container.
Add the pistachios (optionally smaller chopped and/or roasted).
Cut the apricots into wedges and quickly roast them on both sides in a grill pan.
Place the arugula lettuce on a nice plate. Mix the couscous and the sliced cucumber, etc. Spoon this onto the arugula lettuce and place the apricot segments on top.
