The old-fashioned Vienetta, home-made. How nice is that. This Vienetta is suitable for 12 people.
Ingredients:
200 grams of dark chocolate
250g mascarpone
350 ml whipped cream
1 can of condensed milk
1 packet of vanilla-flavored sugar
Preparation:
Take a 25×10 cm cake tin and cover it on the inside with cling film to make it easy to remove the Vienetta. Don’t forget, it’s not that bad, it happened to me too and I got the Vienetta out too. Not as nice as when you use the foil, but nice enough (see the photo).
Take a large piece of baking paper and draw the narrowest side of the cake tin on it 7 to 8 times. Turn the baking paper over so that you do not get the drawing on the chocolate.
Melt 130 grams of chocolate in a bain-marie on the stove. Once the chocolate has melted, remove the bowl from the heat and add the remaining 70 grams of chocolate. Stir well until this chocolate has also melted.
Now spread the chocolate over the drawings on the baking paper. The thinner you do this, the more real the Vienetta will be. The real one also has super thin chocolate in between. Let this dry well.
If you succeed, put all the other ingredients in a bowl and mix them together until a slightly thicker than lumpy mass. This works for me because I have a large mixer.
If this does not work, mix the whipped cream (with the vanilla sugar) separately until stiff. Stir the mascarpone with the condensed milk and mix both well together until a nice homogeneous mass, slightly thicker than lumpy. Place this mixture in a piping bag.
Place a slab of chocolate at the bottom of your cake tin. Pipe a layer of whipped cream/mascarpone over it. another layer of chocolate and another layer of piping. Do this alternately until everything is gone or the can is full. End with the whipped cream/mascarpone mixture.
Cover tightly with cling film and let it set in the freezer for a few hours.
After pouring, you can pipe extra dollops of whipped cream onto the Vienetta, but we didn’t think it was necessary (and this makes it easier for the leftover part to go back in the freezer).
Cut off slices and let it sit for a few minutes, then the ice cream will soften slightly.
