Dan Dan noedels

Dan Dan noodles

Dan Dan noodles are really spicy comfort food. Quickly prepared and then delicious to eat from a bowl with chopsticks.

This dish is for 6 people. Because I’m gluten-free I use rice noodles, but I should actually use egg noodles.

Ingredients:

Spicy oil:

1/3 cup sesame oil

6 cloves of garlic

1-2 tbs red pepper flakes

Dan Dan noodles:

1/2 cup soy sauce

1/4 cup Hoisin sauce

1 tbs honey

2 tbs rice vinegar

3 tbs peanut butter

2 tbs sesame oil

350 grams of minced chicken

600 ml chicken stock (just made from cubes)

200 g baby spinach

500 g mushrooms (mixed, just what you want)

Black pepper

1 large shallot

4 stalks of spring onion

Preparation:

For the spicy oil, heat a good heavy frying pan. Don’t let it get hot all the way through, otherwise your oil will burn straight away.

Crush the garlic or chop it small (do not press). Add the sesame oil to the warm pan. Add the crushed garlic and pepper flakes and let it simmer over medium heat for 5 minutes.  Stir occasionally until the garlic smells delicious. Transfer it to a heatproof bowl or something. Set the pan aside for later.

While the oil is cooking, thoroughly mix the soy sauce, hoisin sauce, honey, rice vinegar, peanut butter and 1/3 cup of water.

Cook the noodles according to the package and rinse with warm water.

Cut the mushrooms and shallot.

In the pan in which you cooked the noodles, add the stock and half of the soy sauce mixture. Bring this to the boil and add the baby spinach. Leave this on very low heat with the lid on the pan. It just needs to stay warm.

Now place the previously used frying pan back on the heat and let it get hot. Reduce the heat slightly. Put 2 tbs sesame oil in the pan and immediately add the minced chicken. Sprinkle some black pepper over it and brown the minced meat. When the minced meat is ready, add the shallot and mushrooms. Cook this for about 2 to 3 minutes.

Slowly add the rest of the soy sauce mixture and stir well. Let this fry thoroughly over high heat so that the minced meat becomes a bit crispy and the sauce is absorbed.

Add a few (2-4) tablespoons of the spicy oil and turn off the heat.

Spoon the stock into bowls, divide the noodles over it and stir briefly. Divide the minced meat over it and then the spring onion.

Serve the oil on the side so people can make it even spicier if they want.
