My own personal favorite at the moment. Nice and spicy, so be sparing with the fish seasoning, but not too sparing because a little spice and heat is desirable.
For 5 people:
Ingredients:
Spice mix:
1 tbs Cayenne pepper
1 tbs black pepper
1 tbs smoked paprika powder
1 tbs garlic powder
1 tbs onion powder
1 tbs salt
1 1/2 tsp dried thyme
1 1/2 tsp dried oregano
Sriracha Aïoli:
3/4 cup mayonnaise
1-2 tbs Sriracha sauce
1/2 lime squeezed
pinch of salt
Mango Salsa:
1 ripe mango
1 tomato
1 red onion
1 tbs honey
1tbs olive oil
1 tbs lime juice (fresh)
1 green jalapeno
Other:
540 g (4 to 5 fillets) Tilapia or pangasius fillet (rubbed well dry)
1-3 tbs olive oil for frying the fish
tri color lettuce
10 wraps
Preparation method:
For the spice mix:
Add all ingredients together in a bowl. Mix well.
The Sriracha aioli:
Stir together the mayonnaise, Sriracha and lime juice. Add a pinch of salt and place covered in the refrigerator.
The mango salsa:
Cut everything into small cubes and mix. Make a dressing from the honey and lime juice and add it. Also place covered in the refrigerator.
The fish:
Rub the fish on both sides with the spice mix.
You don’t need the whole spice mix. How much you use depends on the spice you want. I use half to 3/4 for all fillets.
Fry the fish in a hot pan with oil until done.
Heat the wraps as stated on the packaging. And prepare the wraps nicely with all the ingredients.
